Shredded Chicken

ShreddedChickenToday I vowed to use whatever I had in my fridge to make supper. With a family of seven, our grocery bill can sometimes get out of hand. Many people do not like to use leftovers. I have become the queen of creating gourmet meals out of my leftovers. My kids will ask , “Hey ma, is this yesterday’s chicken?” And I answer “Does it taste like it?” They look at me perplexed, but continue to eat. Shh…if you won’t tell I won’t tell either.

  • 5 pieces of chicken
  • salt, pepper
  • paprika

If you are using chicken that is not leftover, then season with above ingredients and bake or grill. If using leftover chicken, ignore this step.

Sauce:

  • 1 onion, diced
  • olive oil for frying
  • 2/3 c vinegar
  • 1/2 c ketchup
  • 1/4 c brown sugar
  • 1 T. spicy mustard

Sautee onions in oil. Add rest of ingredients. Bring to a boil and cook on low flame for 10 minutes.Pour sauce over shredded chicken and mix. Spoon chicken over mashed potatoes, rice or pasta.

    On Sunday night, my leftover chicken was skimpy for supper.
    This is what I did after my kids ate for my husband and I to have a decent meal.

    I sliced 4 potatoes.
    I mixed a couple spoons of chicken gravy with light mayo.
    I took 2 of the potatoes, layered them in a Pyrex dish with half the sauce mixture. I added the leftover chicken, shredded, and half a bag of frozen pepper stir fry mix. I then took the remaining 2 potatoes and placed them on top with the remainder of the sauce.
    Baked covered for about an hour, and uncovered for a half hour.
    Not a morsel was left.

    It also works well with broccoli…
